Sticky Honey Soy Chicken Rice Bake

Sticky Honey Soy Chicken Rice Bake with tender chicken thighs and seasoned rice with a glossy honey soy glaze. Easy and budget-friendly.6-8 boneless skinless chicken thighs

Ingredients

1 cup uncooked white rice long grain
2 ½ cups chicken broth
1 tablespoon soy sauce
1 tablespoon sesame oil
salt and pepper
For the Honey Soy Sauce:
4 tablespoons honey
3 tablespoons soy sauce
2 cloves garlic minced
4 tablespoons water
1 teaspoon rice vinegar
½ teaspoon salt
1 teaspoon cornflour dissolved in 1 tablespoon of water
To serve:
Green beans or other vegetables

Instructions

Preheat the oven to 400°F / 200°C
In a baking dish, stir together the rice, chicken broth, soy sauce and sesame oil, then place the chicken thighs on top of the rice.
Cover the dish tightly with foil and bake for 30 minutes.
Remove the foil and bake for another 15 minutes or until the rice is tender and the chicken is cooked.
Meanwhile, dissolve the cornflour into the water, then add it to a saucepan along with the remaining sauce ingredients. Heat gently, stirring often, for a few minutes until thick.
Pour the honey soy sauce over the chicken and place the pan under the broiler for a few minutes to get the honey soy chicken bubbling and browned.
