Tomato and Cheese Pie

A delicious and comforting dish featuring layers of juicy tomatoes, creamy cheeses, and a buttery crust, perfect for any meal of the day.

Ingredients

For the crust
1 9-inch deep dish frozen pie crust Let sit at room temperature before baking.
1 large egg white Lightly beaten for brushing on the crust.
For the filling
3 large ripe tomatoes Cut into ½ inch slices.
Kosher salt Kosher salt Used to season tomatoes.
Freshly ground black pepper Freshly ground black pepper To taste.
1 cup mayonnaise
1 cup shredded Mozzarella cheese
½ cup shredded sharp cheddar cheese
½ teaspoon dried basil
2 large green onions Sliced.
6 slices bacon Cooked and crumbled.

Method

Preparation
Let the pie crust sit at room temperature for 20 minutes.
Preheat your oven to 375 degrees F.
Poke the bottom of the pie crust with a fork and brush it with the beaten egg white.
Bake the crust for 12 minutes and let it cool.
Place the tomato slices in a colander and sprinkle them with kosher salt. Let them sit for 10 minutes, then blot dry with paper towels.
Season the tomato slices to taste with pepper and arrange them in the pie crust, saving three slices for the top.
Mixing the Filling
In a medium bowl, mix together the mayonnaise, mozzarella cheese, cheddar cheese, dried basil, green onions, and half of the crumbled bacon.
Baking
Spread the cheese mixture over the arranged tomatoes and top with the remaining three tomato slices.
Sprinkle the rest of the bacon on top.
Bake in a 350-degree oven for 35 to 40 minutes until golden brown.
