This no-bake Strawberry Cream Cheese Icebox Cake is light, creamy, and perfect for summer! Layers of graham crackers, sweetened cream cheese, and fresh strawberries come together for an easy, refreshing dessert.

Ingredients :

1 lb fresh strawberries, sliced
16 oz cream cheese, softened
1 cup heavy whipping cream (or whipped topping)
½ cup powdered sugar
1 tsp vanilla extract
14 oz graham crackers (or vanilla wafers)
Optional: Strawberry jam or fresh mint for garnish

Method :

Make the cream cheese filling: Beat cream cheese, powdered sugar, and vanilla until smooth. In a separate bowl, whip the heavy cream to stiff peaks, then fold into the cream cheese mixture.

Layer the cake: In a 9×13 dish, spread a thin layer of filling. Top with a single layer of graham crackers, then more filling, and a layer of strawberries. Repeat 2-3 times, ending with cream and strawberries on top.

Chill: Cover and refrigerate for at least 4 hours (or overnight) so the crackers soften into cake-like layers.

Serve: Garnish with extra strawberries, a drizzle of jam, or mint. Slice and enjoy this summer strawberry cake!
