Ingredients :
Elbow macaroni (12 oz) or any other noodle shape of your choice
2 tbsp unsalted butter
2 tbsp all-purpose flour
1 cup whole mil
1 cup craft beer (lager or pale ale works best for balanced flavor)
8 oz smoked cheddar cheese, grated
4 oz sharp cheddar cheese, grated
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp mustard powder
Salt and black pepper to taste
1/4 cup panko breadcrumbs
2 tbsp melted butter (for topping)

To prepare the pasta, heat a big pot of salted water until it boils. The elbow macaroni should be al dente after 7 to 8 minutes of cooking.
To prepare the roux, melt two tablespoons of butter in a large pot over medium heat.Melt the flour and simmer for 1 to 2 minutes, turning often to avoid burning, until just beginning to become golden.
Add Liquids: Whisk constantly to avoid lumps as you gradually pour in the milk and beer. Continue cooking for 3–4 minutes, until the mixture has thickened a bit.
