Ingredients :

8 oz (225g) pasta (fettuccine, linguine, or spaghetti work well)
4 oz (115g) smoked salmon, thinly sliced
1 cup heavy cream
1/2 cup grated Parmesan cheese
One large lemon, or 1/4 cup of fresh lemon juice
Zest of 1 lemon
2 tbsp fresh dill, finely chopped
2 cloves garlic, minced
2 tbsp olive oil
Salt and black pepper, to taste
1/4 tsp red pepper flakes (optional, for a slight kick)
Fresh dill sprigs, for garnish
Lemon wedges, for serving

Method :

Bring a big saucepan of salted water to a boil in order to cook the pasta. As directed on the package, add the pasta and simmer until al dente. After draining, put aside 1/2 cup of the pasta water.

Get the Creamy Lemon Dill Sauce ready by: Heat the olive oil in a big skillet over medium heat. For one to two minutes, or until fragrant, sauté the minced garlic. Bring to a slow simmer after adding the heavy cream. Stir in the lemon juice, lemon zest, and Parmesan cheese, whisking until the sauce thickens slightly (about 2-3 minutes).

Add the Smoked Salmon: Gently fold in the smoked salmon and chopped dill. Cook for 1-2 minutes to warm the salmon through, being careful not to overcook it. To get the right consistency if the sauce is too thick, add a little of the pasta water you set aside.

Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat evenly with the creamy lemon dill sauce. Add red pepper flakes (if using), black pepper, and salt for seasoning. Taste and adjust seasoning as needed.

Serve: Divide the smoked salmon pasta among plates. Garnish with fresh dill sprigs and serve with lemon wedges for an extra burst of flavor.
