Ingredients :

For the Shrimp Tostadas (Serves 4):
1 lb large shrimp, peeled and deveined
8 corn tortillas
2 tbsp olive oil
1 tsp chili powder
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 avocado, diced
1 cup shredded cabbage
1/2 cup diced tomatoes
1/4 cup red onion, finely chopped
1 jalapeño, seeded and sliced (optional)
1/4 cup fresh cilantro, chopped
1 lime, cut into wedges
1/2 cup cotija cheese, crumbled (optional)
1/4 cup sour cream or Mexican crema (optional)

For the Lime Crema (Optional):
1/2 cup sour cream
1 tbsp lime juice
1 tsp lime zest
Pinch of salt

Method :

Prepare the Tortillas: Preheat your oven to 400°F (200°C). Arrange the corn tortillas on a baking sheet after brushing them with olive oil on both sides. Bake until golden and crispy, turning halfway through, 8 to 10 minutes. Alternatively, fry the tortillas in a skillet with hot oil for 1-2 minutes per side until crisp. Set aside.

Season and Cook the Shrimp: In a large bowl, toss the shrimp with chili powder, cumin, garlic powder, salt, and black pepper. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Cook the shrimp for two to three minutes on each side, or until they are opaque and pink. Take off the heat.

Make the Lime Crema (Optional): In a small bowl, whisk together sour cream, lime juice, lime zest, and a pinch of salt until smooth. Set aside.

Assemble the Tostadas: Place a crispy tortilla on a plate. Layer with shredded cabbage, a few cooked shrimp, diced avocado, tomatoes, red onion, and jalapeño slices. Sprinkle with cilantro and cotija cheese, if using. Drizzle with lime crema or serve with a dollop of sour cream.

Serve: Serve right away after adding a squeeze of fresh lime juice as a garnish. Pair with extra lime wedges for a burst of citrus flavor.
