Ingredients (Serves 4):
1 lb large shrimp, peeled and deveined
2 tbsp olive oil
1 medium onion, finely chopped
3 garlic cloves, minced
1 tsp red pepper flakes (adjust for desired spice level)
1 (28 oz) can crushed tomatoes
1/2 cup dry white wine
1 tsp dried oregano
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped
Salt and black pepper to taste
12 oz linguine or spaghetti
Optional: grated Parmesan cheese for serving
Method :
Prepare the Shrimp: Gently pat the shrimp dry with paper towels and season generously with salt and freshly ground black pepper. Set aside for later use.
Boil the Pasta: Fill a large pot with water, add a pinch of salt, and bring to a rolling boil. Cook the pasta as per package directions until al dente, then drain and reserve.
Create the Spicy Tomato Sauce: Heat olive oil in a large skillet over medium heat. Add chopped onion and cook, stirring occasionally, until soft and translucent, about 5 minutes. Stir in minced garlic and red pepper flakes, sautéing for 1 minute until aromatic.
Incorporate Tomatoes and Wine: Add crushed tomatoes, white wine, and dried oregano to the skillet. Let the sauce simmer gently for 10 minutes, stirring occasionally, until it thickens slightly. Adjust seasoning with salt and pepper to taste.
Sauté the Shrimp: Place the seasoned shrimp into the sauce, cooking for 2-3 minutes on each side until they turn pink and opaque.
Mix and Serve: Add the drained pasta to the skillet, tossing to coat evenly with the sauce and shrimp. Stir in fresh basil and parsley. Serve hot, garnished with a sprinkle of Parmesan cheese, if desired.
