Ingredients :

6 bone-in, skin-on chicken thighs
1 cup fresh plums, pitted and chopped (or ¾ cup plum jam for convenience)
¼ cup soy sauce
2 tablespoons honey
2 tablespoons rice vinegar
1 tablespoon fresh ginger, grated
2 garlic cloves, minced
1 teaspoon sesame oil
½ teaspoon red chili flakes (optional, for a spicy kick)
Salt and pepper to taste
2 tablespoons olive oil
Fresh cilantro or green onions for garnish

Method :

Prepare the Plum Sauce: In a medium bowl, combine chopped plums (or plum jam), soy sauce, honey, rice vinegar, ginger, garlic, sesame oil, and red chili flakes (if using). Use a food processor or blender to mix until smooth. Set aside.

Add seasoning to the chicken. Using paper towels, pat dry the chicken thighs. Season both sides with salt and pepper.

To sear the chicken, heat a large pan over medium-high heat with olive oil. Skin-side down, add the chicken thighs and fry them for 5–6 minutes, or until they are golden brown. Flip and cook for another 3 minutes. Remove chicken from the skillet and set aside.

Cook the Sauce: In the same skillet, pour in the plum sauce mixture. Bring to a simmer, scraping up any browned bits from the pan for extra flavor.

Bake the Chicken: Return the chicken thighs to the skillet, skin-side up, spooning some sauce over them. Place the pan in an oven that has been set to 375°F (190°C). Bake it for 20 to 25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).

To serve, take the chicken out of the oven and let it five minutes to rest. Garnish with fresh cilantro or green onions. Serve with rice, quinoa, or roasted vegetables to soak up the tangy plum sauce.
