Ingredients :

4 large red bell peppers (or 12 oz jarred roasted red peppers, drained)
1 medium onion, diced
2 cloves garlic, minced
2 medium carrots, chopped
2 tablespoons olive oil
4 cups vegetable broth
1 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper
1/2 cup heavy cream or coconut milk
Fresh basil or parsley (for garnish)
Optional: Croutons or crusty bread for serving

Method :

Roast the Peppers
If using fresh peppers, preheat your oven to 450°F (230°C). Place whole red peppers on a baking sheet and roast for 20-25 minutes, turning occasionally, until the skins are charred and blistered. Remove from the oven, place in a bowl, and cover with a towel or plastic wrap for 10 minutes to steam. Peel off the skins, remove seeds, and chop the peppers.

Sauté the Aromatics
The olive oil should be heated over medium heat in a large saucepan. Add the chopped onion and carrots and cook until they are soft, 5 to 7 minutes. Add the minced garlic and sauté until fragrant, about 1 minute more.

Build the Flavor
Add the roasted red peppers, smoked paprika, cumin, salt, and black pepper to the pot. Coat the veggies with the spices by giving them a good stir.

Simmer the Soup
Bring to a boil after adding the veggie broth. Reduce heat to low and let the soup simmer for 15-20 minutes, allowing the flavors to meld.

Blend to Perfection
Using an immersion blender (or working in batches with a standard blender), puree the soup until smooth. Add the coconut milk or heavy cream and mix for a creamier texture.

Taste and Adjust
If necessary, add more salt or pepper after tasting the soup to adjust the seasoning. If the soup is too thick, add a bit more broth to reach your desired consistency.

Serve and Enjoy
Ladle the soup into bowls, garnish with fresh basil or parsley, and serve with croutons or crusty bread for a complete meal.
