This easy pork tenderloin recipe comes together in under 40 minutes, making it the perfect weeknight meal that still feels special. Ingredients : (Serves 4)
1.5 lbs (about 700g) pork tenderloin
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp smoked paprika
1 tsp dried thyme
2 medium apples (Fuji or Honeycrisp work best), peeled and sliced into ¼-inch wedges
1 small yellow onion, thinly sliced
2 garlic cloves, minced
¼ cup apple cider or apple juice
1 tbsp maple syrup (optional, for extra sweetness)
1 tablespoon chopped fresh rosemary (or 1 teaspoon dry)
1 tbsp butter (for finishing)
Method :
Step 1: Prep the Pork Tenderloin
Using paper towels to pat dry the pork guarantees a flawless sear. Combine the thyme, smoked paprika, salt, and pepper in a small bowl. Rub the spice blend evenly over the entire surface of the pork tenderloin.
Step 2: Sear the Pork
In a large ovenproof skillet (such as cast iron), heat the olive oil over medium-high heat. After it is shimmering, add the pork tenderloin and sear it for three to four minutes on each side, or until it is golden brown. Remove pork and set aside.
Step 3: Sauté the Apples & Aromatics
Add the cut apples and onions to the same skillet. Stirring occasionally, cook for 5 to 6 minutes, or until they start to soften and caramelize. Add the rosemary and garlic and heat until fragrant, about 30 seconds.
Step 4: Deglaze & Bake
Scrape off any browned parts from the pan’s bottom before adding the apple cider and maple syrup. Place the pork tenderloin back in the skillet and tuck it in between the apples. Spread butter on top.
Place the skillet in an oven that has been preheated to 400°F (200°C). Roast the pork for 12 to 15 minutes, or until the meat thermometer reads 145°F (63°C).
Step 5: Rest & Serve
Take the pork out of the oven and give it five to ten minutes to rest. This locks in the juices. Slice the pork into ½-inch medallions and serve generously topped with the caramelized apples and pan sauce.
