Let’s dive into how to make this delicious pear and ginger loaf!
Ingredients :
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp ground ginger
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/4 cup molasse
2 medium ripe pears, peeled and finely chopped (about 1 1/2 cups)
1/4 cup crystallized ginger, finely chopped
1/2 cup plain Greek yogurt or sour cream
Optional: 1/4 cup chopped walnuts or pecans for extra crunch
Method :
Preheat and Prepare: Set the oven temperature to 350°F (175°C). Line a 9 × 5-inch loaf pan with parchment paper to make removal easier and grease the pan.
Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, ground ginger, cinnamon, and nutmeg. Set aside.
Cream Butter and Sugar: In a large bowl, cream the softened butter and granulated sugar with an electric mixer for two to three minutes, or until light and fluffy.
Add Wet Ingredients: Beat in the eggs one at a time, followed by the vanilla extract and molasses. It’s okay if the mixture appears a little curdled.
Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture in three additions, alternating with the Greek yogurt. Start and end with the dry ingredients. Mix until just combined.
Fold in Pears and Ginger: Gently fold in the chopped pears, crystallized ginger, and nuts (if using) with a spatula. Be careful not to overmix.
Bake: Pour batter into the loaf pan and level the top. If you stick a toothpick in the center, it should come out clean after 55 to 65 minutes of baking.
Cool and Serve: After ten minutes of cooling in the pan, move the loaf to a wire rack to finish cooling. Slice and serve with a spread of butter or a drizzle of honey for extra indulgence.
