Perfect for busy weeknights, meal prep, or feeding a hungry family without the stress.

Why You’ll Love This Recipe

This one pot chicken casserole is more than just convenient-it’s flavor-packed, nutritious, and ridiculously simple. No need to boil rice separately, bake in the oven, or dirty multiple pans. Everything simmers together in a single Dutch oven or large skillet, creating a rich, creamy sauce that clings to every bite. The broccoli stays bright and tender, the chicken is juicy, and the cheese? Oh, the cheese is everything.

Ingredients :

1 tbsp olive oil
One pound of skinless, boneless chicken breasts, cut into one-inch chunks
1 medium onion, diced
2 cloves garlic, minced
1 ½ cups long-grain white rice (or brown rice for whole grain option)
3 cups low-sodium chicken broth
1 cup water
2 cups fresh broccoli florets (or frozen, no thawing needed)
1 tsp dried thyme
½ tsp paprika
Salt and black pepper to taste
1 ½ cups shredded sharp cheddar cheese
½ cup grated Parmesan cheese
Half a cup of heavy cream or half-and-half (for added creaminess)
Optional: ¼ cup chopped parsley for garnish

Method :

Step 1: Sear the Chicken
In a big skillet or large Dutch oven, heat the olive oil over medium-high heat. Add the chicken cubes, season with salt and pepper, and cook for five to six minutes, or until golden brown. Remove chicken and set aside.

Step 2: Sauté Aromatics
Add the chopped onion to the same saucepan and simmer for three to four minutes, or until it softens. Add the garlic and heat until fragrant, about 30 seconds.

Step 3: Toast the Rice
To gently toast the rice, add it to the saucepan and stir for one to two minutes. This step enhances flavor and helps prevent mushiness.

Step 4: Simmer the Casserole
Pour in chicken broth and water. Add thyme, paprika, and a pinch of salt. After bringing to a boil, lower the heat. Cover and simmer for 15 minutes.

Step 5: Add Broccoli & Chicken
After 15 minutes, stir in the broccoli florets and cooked chicken. Cover and cook for another 8–10 minutes, or until rice is tender and liquid is absorbed.

Step 6: Melt in the Cheese
Remove from heat. Stir in heavy cream, cheddar, and Parmesan until completely melted and creamy. Taste and adjust seasoning. Let sit for 3–5 minutes-the casserole will thicken slightly as it rests.

Step 7: Serve & Enjoy
Garnish with fresh parsley and serve warm. This cheesy broccoli rice casserole is best enjoyed immediately, but leftovers reheat beautifully!
