Ingredients :

4 medium zucchini, halved lengthwise and scooped out
1 lb ground turkey
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 bell pepper (red or green), diced
1 cup canned black beans, drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
1 tbsp taco seasoning (store-bought or homemade)
1 tsp chili powder
1/2 tsp cumin
1 cup salsa (mild or spicy, your choice)
1 cup shredded cheddar or Mexican blend cheese
Salt and pepper to taste
Optional toppings: chopped cilantro, avocado slices, sour cream, or green onions

Method :

Preheat the Oven: Line a baking sheet with parchment paper and preheat the oven to 375°F (190°C).

Prepare the Zucchini: Slice zucchini in half lengthwise. Scoop out the middle with a spoon to form a “boat.” After placing the zucchini pieces cut side up on the baking pan, sprinkle them with a little salt and pepper.

Cook the Filling: In a large pan over medium heat, heat the olive oil. Sauté the chopped onion and garlic for two to three minutes, or until aromatic. Add ground turkey and cook until browned, breaking it apart with a spoon (about 5-7 minutes).

Season the Mixture: Stir in bell pepper, black beans, corn, taco seasoning, chili powder, and cumin. Cook for another 3-4 minutes. Add salsa and stir to combine, letting the mixture simmer for 2 minutes. Adjust seasoning with salt and pepper.

Stuff the Zucchini: Spoon the turkey taco mixture evenly into the zucchini boats. Top each with a sprinkle of shredded cheese.

Bake: Place the baking sheet in the oven and bake for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
