Ingredients :

For the Graham Cracker Crust:
One and a half cups of graham cracker crumbs (about twelve full sheets)
¼ cup granulated sugar
½ cup unsalted butter, melted

For the Cheesecake Filling:
Softened cream cheese (24 ounces; 3 packages, 8 ounces each)
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
½ cup sour cream
½ cup heavy cream
One cup of melted, slightly chilled milk chocolate chips

For the S’mores Topping:
1 cup mini marshmallows
½ cup milk chocolate chips or chunks
2 graham crackers, roughly crumbled
Optional: Marshmallow fluff for extra gooeyness

Method :

Step 1: Prepare the Graham Cracker Crust
Preheat your oven to 325°F (163°C).
Mix the melted butter, granulated sugar, and graham cracker crumbs together in a medium-sized basin until well combined.
Press the mixture firmly into the bottom of a 9-inch springform pan to form a uniform layer.

Step 2: Make the Cheesecake Filling
Add granulated sugar and vanilla extract, mixing until fully combined.
To avoid overmixing, add eggs one at a time and beat on low speed after each addition.
Stir in heavy cream, melted chocolate, and sour cream until the batter is silky smooth.
Evenly distribute the filling after pouring it over the chilled graham cracker shell.

Step 3: Bake the Cheesecake
Wrap the bottom of the springform pan with aluminum foil to prevent leaks.
To make a water bath for a creamy texture, place the springform pan in a bigger roasting pan and fill it halfway up the sides with boiling water.
Bake for 55 to 65 minutes, or until the center jiggles a little and the edges are firm.
