Ingredients :

1 lb (450g) large shrimp, peeled and deveined
2 bell peppers (red, yellow, or green), sliced
1 medium onion, sliced
2 tbsp olive oil
1 tbsp chili powder
1 tsp cumin
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp salt
1/4 tsp black pepper
Juice of 1 lime
8 small flour or corn tortillas
Optional toppings: avocado, sour cream, cilantro, salsa, lime wedges

Method :

Prepare the Seasoning: In a small bowl, mix chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper to create a bold fajita seasoning.

Marinate the Shrimp: Place shrimp in a bowl, drizzle with 1 tbsp olive oil and half the lime juice, then toss with half the seasoning mix. Set aside for 10 minutes.

Prepare the veggies: In a large pan, heat 1 tablespoon of olive oil over medium-high heat. Add sliced bell peppers and onion. Cook for 5-7 minutes, stirring occasionally, until softened and slightly charred. Remove from skillet and set aside.

Cook the Shrimp: Place the marinated shrimp in the same skillet. Cook until opaque and pink, 2 to 3 minutes per side. Avoid overcooking to keep the shrimp tender.

Mix and Serve: Toss everything together after adding the remaining spice and lime juice to the pan with the veggies. Use a griddle or microwave to reheat the tortillas. Serve the shrimp and veggie mixture on tortillas with your choice of toppings like avocado, sour cream, or salsa.
