Whether you’re a beginner or a seasoned baker, this foolproof method delivers restaurant-quality lemon curd every time.
Ingredients : for Easy Lemon Curd (Makes-1.5 cups)
3 large eggs (plus 1 yolk for extra richness)
¾ cup (150g) granulated sugar
½ cup (120ml) fresh lemon juice (about 3-4 large lemons)
2 tbsp finely grated lemon zest (don’t skip-it’s flavor magic!)
½ cup (1 stick/113g) unsalted butter, cut into small cubes
Method :
Step 1: Combine Wet & Sweet
In a medium saucepan, whisk together the eggs, sugar, lemon juice, and lemon zest until fully blended. No lumps!
Step 2: Gently Cook Over Low Heat
Place the saucepan over low heat. Add the butter cubes and stir constantly with a wooden spoon or silicone spatula.
Step 3: Test for Doneness
After 8-12 minutes, the curd should coat the back of a spoon. Run your finger across it-if it leaves a clean trail, it’s done! (It will thicken more as it cools.)
Step 4: Strain & Chill
Immediately pour the curd through a fine-mesh sieve into a clean bowl or jar to remove any bits of zest or cooked egg. Cover the surface directly with plastic wrap, pressing it down to prevent a skin from forming.
Refrigerate for at least 2 hours-or overnight-for maximum flavor and texture.
