Ingredients :
2 tbsp olive oil or butter
1 medium onion, diced
2 cloves garlic, minced
2 carrots, peeled and diced
2 celery stalks, chopped
1 medium potato, peeled and cubed
1 zucchini or yellow squash, diced (optional)
4 cups low-sodium vegetable broth
1 cup chopped kale or spinach
½ cup heavy cream, half-and-half, or unsweetened plant-based cream (for dairy-free)
1 tsp dried thyme
½ tsp smoked paprika (optional, for depth)
Salt and black pepper, to taste
Fresh parsley, for garnish
Method :
Sauté the Aromatics
In a big saucepan, melt butter or olive oil over medium heat. Add the onion and cook for three to four minutes, or until it is transparent. Add the garlic and heat until fragrant, about 30 seconds.
Add Vegetables & Seasonings
Toss in carrots, celery, and potato. Cook for 5 minutes, stirring occasionally. Add thyme, smoked paprika, salt, and pepper.
Simmer in Broth
Add the veggie broth and heat it until it boils. Reduce heat, cover, and simmer for 15-20 minutes, or until vegetables are fork-tender.
Blend (Optional)
For a smoother texture, use an immersion blender to partially blend the soup leaving some chunks for heartiness. Alternatively, leave it fully chunky.
Add Greens & Cream
