Ingredients :
For the vegan brioche Rolls :
3 ½ cups (440g) all-purpose flour
¾ cup (180ml) unsweetened almond milk, warmed
¼ cup (50g) granulated sugar
¼ cup (60g) vegan butter , melted
2 ¼ tsp (7g) active bry yeast
1 tablespoon ground flaxseed mixed with 3 tablespoons water (to make a flax egg)
1 tsp vanilla extract
½ tsp salt
For the vegan Custard :
Use ½ cup of whole coconut milk
¼ cup (50g) granulated sugar
3 tbsp cornstarch
1 tsp vanilla extract
¼ tsp turmeric (for color, optional)
pinch of salt
Method :
Step 1: Prepare the brioche Dough
in a small bowl , mix the warmed almond milk , suger , and yeast . Let it sit for five to ten minutes until it starts to foam.
in a large mixing bowl , combine flour and salt. Make a well and add the yeast mixture , flax egg melted vegan butter , and vanilla extract.
Mix until a soft dough forms. Work the dough for 8-10 minutes until its’s smooth and stretchy.
The dough should be put in a lightly oiled basin , covered, and left in a warm place to rise for 1 to 2 hours, or until doubled in size.
Step 2: Make the vegan Custard
Sugar, cornstarch, coconut milk, and salt should all be combined in a pot and whisked until smooth.
