Ingredients :

For the Meatballs:
1 lb (450g) ground pork or chicken
1/2 cup breadcrumbs
1 large egg
2 cloves garlic, minced
1 tbsp fresh ginger, grated
2 tbsp green onions, finely chopped
2 tbsp fresh cilantro, chopped
1 tbsp fish sauce
1 tbsp soy sauce
1 tsp red curry paste
1 tsp lime zest
1/2 tsp salt
1/4 tsp black pepper

For the Thai-Inspired Sauce:
1/2 cup coconut milk
2 tbsp red curry paste
1 tbsp fish sauce
1 tbsp lime juice
1 tbsp brown sugar
1 tsp sesame oil
1/4 cup fresh cilantro, chopped (for garnish)
1/4 cup crushed peanuts (optional, for garnish)

Method :

Step 1: Prepare the Meatballs
Turn the oven on to 400°F (200°C) and place parchment paper on a baking pan.

In a large bowl, combine ground pork or chicken, breadcrumbs, egg, garlic, ginger, green onions, cilantro, fish sauce, soy sauce, red curry paste, lime zest, salt, and pepper.

Mix only until incorporated; do not overmix to preserve the meatballs’ tenderness.

Form the mixture into 1-inch meatballs (about 20-24 meatballs) and place them on the prepared baking sheet.

Bake for 15-18 minutes, or until the meatballs are cooked through and golden brown.

Step 2: Make the Thai-Inspired Sauce
Mix the coconut milk, fish sauce, red curry paste, lime juice, brown sugar, and sesame oil in a small saucepan over medium heat.

Gently heat for 5 to 7 minutes.

Fine-tune the taste and heat by incorporating additional fish sauce or lime juice as desired.

Step 3: Serve and Garnish
