Ingredients :(Serves 8–10)

For the Pasta Salad:
1 pound (450g) rotini or fusilli pasta (great for holding dressing!)
1 cup (150g) cherry tomatoes, halved
1 cup (120g) diced red onion
1 cup (150g) sliced black olives (Kalamata preferred)
1 cup (120g) diced pepperoni (or salami for a milder taste)
1 cup (120g) cubed provolone or mozzarella cheese
½ cup (75g) chopped fresh parsley
¼ cup (35g) chopped fresh basil
1 teaspoon dried oregano

For the Dressing:
⅓ cup (80ml) extra virgin olive oil
3 tablespoons red wine vinegar (or balsamic for a sweeter note)
1 teaspoon Dijon mustard
1 clove garlic, minced
1 teaspoon dried basil
½ teaspoon salt
¼ teaspoon freshly ground black pepper
Optional: ½ teaspoon Italian seasoning blend

Method :

1- Cook the Pasta
Bring a large pot of well-salted water to a full rolling boil. Add the pasta and cook until , according to the package directions. Drain thoroughly, then rinse under cold running water to stop the cooking and cool the pasta completely. Transfer to a large mixing bowl.

2- Prep the Vegetables & Proteins
While the pasta cools, chop all vegetables, cheese, and meats. Add them to the bowl with the pasta. Sprinkle in parsley, basil, and oregano.

3- Make the Dressing
In a small jar or bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, dried basil, salt, pepper, and Italian seasoning. Pour over the salad and toss gently until everything is evenly coated.

4- Chill & Serve
Cover and refrigerate for at least 2 hours-ideally 4 or more-to let the flavors meld. Stir well before serving. Taste and adjust salt or vinegar if needed.
