For the Sheet Pan Meal:
4 (6-oz) skinless cod fillets
1 lb fresh asparagus, woody ends trimmed
2 tbsp olive oil
Salt and freshly ground black pepper, to taste
1 lemon, sliced (for baking)
For the Garlic Lemon Caper Sauce:
3 tbsp unsalted butter (or olive oil for dairy-free)
3 garlic cloves, minced
Zest and juice of 1 lemon
2 tbsp drained capers
2 tbsp fresh parsley, finely chopped
Pinch of red pepper flakes (optional)
Method :
Step 1: Prep & Preheat
Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or lightly grease it.
Step 2: Arrange the Cod and Asparagus
Place the cod fillets in the center of the baking sheet. Toss the asparagus with 1 tbsp olive oil, salt, and pepper, then arrange around the fish. Drizzle the cod with the remaining olive oil, and season lightly with salt and pepper. Top each fillet with a slice of lemon.
Step 3: Bake
Bake for 12–15 minutes, or until the cod flakes easily with a fork and the asparagus is tender crisp.
Step 4: Make the Garlic Lemon Caper Sauce
While the fish bakes, prepare the sauce: In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for 30–60 seconds until fragrant (don’t let it brown). Add the capers, lemon zest, lemon juice, and red pepper flakes (if using). Simmer for 1–2 minutes, then remove from heat and stir in fresh parsley.
Step 5: Serve
Drizzle the warm garlic lemon caper sauce over the baked cod and asparagus. If preferred, garnish with lemon wedges and more parsley.
