Ingredients :(Serves 4)

12 oz linguine or spaghetti (Italian pasta)

1 lb large shrimp , peeled and deveined

2 tbsp olive oil

3 cloves garlic , minced

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated parmesan cheese

1 cup cherry tomatoes , halved

2 cups fresh spinach

1 tsp italian seasonig

1/4 tsp red pepper flakes (optional, for a kick)

Salt and black pepper to taste

Fresh basil or parsley for garnish

Method :

Cook the Pasta : Bring a large pot of salted water to a boil. Add the italian pasta (linguine or spaghetti) and cook according to package instructions until al dente .

After the shrimp have dried , season them with salt , pepper , and seasoning.

Make the Creamy Tuscan Sauce : in the same skillet , add the remaining 1 tbsp olive oil . For one minute , sauté the minced garlic until aromatic .Pour in the chicken broth ,  scraping up any browend bits from the pan . Stir in the heavy cream and Parmesan cheese ,  whisking until smooth.

Add vegetables : Stir in the cherry tomatoes ,  spinach ,  and red pepper flakes (if using). Cook for 2-3 minutes until the spinach wilts and the tomatoes soften.

Combine : Return the cooked shrimp to the skillet . Add the drained pasta and toss to coat in the creamy Tuscan sauce . To achieve the desired consistency if the sauce is too thick , incorporate a small amount of the reserved pasta water.
