1 – stalk of celery

400 gr – chopped tomatoes

1 – green zucchini
100 gr – frozen peas
150 gr – green bean pods
1 – sprig of rosemary
30 ml – olive oil
2.5 – liters of water
salt and pepper to taste
a few basil leaves
a few leaves of green parsley
lemon juice

Method :

We start by preparing the vegetables, which need to be peeled, washed, and cut into medium pieces, the size of the pasta used. We put them in very cold water to keep them crispy and leave them there until we add them to the soup. Cold water will keep vegetables crisper even after cooking

Add 2.5 liters of water to a large saucepan and turn on the stove. Let the water boil, then add a teaspoon of salt. Mix with water until the salt dissolves

In a big saucepan or frying pan, heat the oil. First, add the onion and garlic, then the celery and carrots. Sauté the vegetables for 2-3 minutes or until they begin to soften. Stir them with a spatula so that they fry evenly

Then add zucchini and pepper. We also mix them for 2 minutes in hot oil. Then add frozen vegetables and chopped tomatoes. Pour in hot water, then add pasta

Cook the delicious Italian Minestrone for 12-15 minutes, during which time add a sprig of thyme, salt and pepper to taste
